Easy, Tasty, Healthy. No1
Recently I’ve been questioning everything that I put into my body. I’ve been thinking of things that we can eat that takes little preparation time, so every time I find something worth sharing I’ll post it.
The idea is that you can prepare things as you go and eat healthily every night. I’m sure that many of you are like I was, getting to 5pm and realised that you’d prepared nothing for yourself or the children so you’d go to your old reliable fish fingers for the kids or end up having pasta; don’t get me wrong, these things are still fine every so often, but I started to feel that it was my go to for ease.
At the start of the week I’ll cook off a bunch of easy ingredients and keep in the fridge in boxes to be used for a quick healthy meal throughout the week.
Trying to make use of our ever growing egg collection this dish has made it onto our weekly dinner listing. I posted a picture on Instagram a while ago and since then its made its way onto our plates once a week, so I thought why not share!
Curried sweet potato, brown rice and poached eggs. (I think i also put some quinoa through this one, but most of the time we just use brown rice)
Below are the instructions for a meal for 2, just up the ingredients for however big your family is.
- 3 Sweet potatoes
- 1 and half cups brown rice
- 4 fresh free range eggs
- Curry powder
- Chilli powder
- Chop and roast your sweet potatoes with oil and a little salt for 15mins at 180^C
- Boil 2 pots of water
- Mix sweet potatoes and put on for another 10 mins.
- Put the rice, 1tsp curry powder and 1 tsp chilli powder in one of the pots and boil until alarm goes for the sweet potatoes
- Turn the oven and hob of rice off.
- Stir your water very quickly then crack all of your eggs into the pot and poach.
- As your eggs are poaching drain your rice and take the sweet potato out of the oven.
- Put your sweet potato in a bowl, add 2 tsp of curry powder and mix.
- Feel the whites of your eggs, they should feel almost hard and the yolk should feel runny, put them on a dishtowel to dry.
- Fill your bowls with rice, sweet potato and your two poached eggs on top and enjoy.
When you cut into your eggs the runny yolk should run through your rice and sweet potato.
